The Prius pedal is a common choice in conversions because it is a proper automotive dual track pedal, made in enormous numbers and cheap to obtain. Without the mating connector it is an expensive paperweight.
It is a dual track pedal, and that matters for safety. Two independent potentiometers read the same pedal, and a controller compares them. If one track fails, drifts or shorts, the disagreement between them is detectable and the controller can refuse the signal instead of accepting a phantom throttle demand. That is why production cars use two tracks, and why using both is worth the extra wiring.

If your controller takes a three wire throttle signal, use pins 4, 5 and 6 only: one supply, one ground and one wiper. That works, but it gives up the redundancy the pedal was designed around, so prefer a controller that reads both tracks where you have the choice.
Curtis controllers conventionally expect roughly 0.8 V at rest and 3.6 V at full travel. Check your own controller's expected range and calibrate to the pedal rather than assuming.
