Most of the wiring in a conversion is not high voltage. Lights, pumps, fans, contactor coils and the dozens of circuits that make a car work all run at 12 volts, and they need ordinary single insulated cable in sensible sizes.
2.5 mm² is the size for circuits that actually draw current. Cooling fans, coolant pumps, contactor coils, headlamp feeds and anything running a metre or two from the fusebox. Where 1 mm² is for signals and small lamps, this is for loads.
Size by current and by length, not by habit. Voltage drop is what usually decides automotive cable size rather than heating: a long run at 12 volts can lose enough voltage in the cable to slow a pump or drop out a contactor, even when the cable is nowhere near its thermal limit. For long runs, go up a size again.

Compatibility

This is low voltage cable. It is not rated for, and must never be used on, any circuit at pack potential. High voltage runs need double insulated, shielded, orange sheathed cable rated for the job.
For signal and low current circuits, the 1 mm² version is the smaller size.
